Vegetable Rice Soup

Ingredients
- 1 tbsp olive oil
- 4 jars of water (or 2.5 cups)
- ¼ cup powdered broth (chicken or veg)
- ¾ cups rice
- 1 chopped onion
- 1 cup chopped carrots and celery (or vegetables of choice)
- 1 lemon
- Salt and pepper to taste
- Optional: add protein of choice

Cooking Instructions
- Heat oil over medium heat. Add onion, carrots and celery to a pot. Cook until vegetables are soft
- Add powdered broth and water, stir
- Bring to a boil
- Add rice and reduce heat to medium-low
- Simmer until rice is cooked
- Add the juice of 1 lemon, salt and pepper
