Herb Bean Dip

Ingredients
- 1 cup dried beans
- Water
- Lemon juice (to taste)
- Chopped rosemary (or fresh herb of choice)
- ½ cup chopped onion (any colour)
- Salt & pepper (to taste)
- Chips or crackers
- Optional protein: Add chilli powder to taste for some extra spice!

Cooking Instructions
- Put beans into a bowl and cover with 3 inches of water
- Soak beans overnight at room temperature
- Drain and rinse beans
- Put beans in a pot and cover with water
- Bring beans to a boil, then cover beans and simmer until beans are soft around 30 minutes
- Put beans into a bowl, use a fork or masher to mash beans
- Add lemon juice, fresh herbs, onion, salt, pepper and any other spices
- Stir ingredients together
- Enjoy with chips or crackers 🙂
